What it is

An insulated cabinet heated by electric elements or gas burners, with a thermostat, shelves and usually an overhead grill (broiler). Fan or convection ovens circulate hot air, cooking faster and more evenly, so recipes often suggest a temperature about 20 °C lower for fan settings. Countertop toaster ovens work the same way on a smaller scale.

What it’s for: Cooking food all round with steady dry heat for baking, roasting and top-down grilling.

How to use it

  1. Arrange shelves first: the middle for most baking, the top for browning, near the grill for broiling.
  2. Preheat to the recipe temperature and wait until it is reached.
  3. Place food on a tray or in a dish, leaving space around it for air to circulate.
  4. Avoid opening the door often, especially for cakes and bread.
  5. Check doneness by colour, a skewer or a thermometer, and remove with oven gloves.

Good to know

Tasks
baking cakes, bread and pastry, roasting meat and vegetables, grilling or broiling from above, making casseroles and gratins, toasting nuts and breadcrumbs, keeping food warm
Cooking methods
Oven-baked, Roasted, Broiled / grilled under heat, Braised, Slow-cooked, Toasted
Materials
enamelled steel interior, stainless steel
Care and cleaning
Wipe spills once cool before they bake on. Clean the interior with a baking-soda paste or the oven's self-clean cycle; never use self-clean with trays left inside. An oven thermometer reveals whether the dial is accurate.
Limitations
Uses a lot of energy for small amounts of food; many ovens run hotter or cooler than the dial shows.

Safety

  • Always use dry oven gloves; wet cloth conducts heat.
  • Pull the shelf out rather than reaching into the oven.
  • Keep tea towels and packaging away from the grill and burners.
  • Gas ovens need ventilation and should be checked if they smell of gas.

If you don’t have one

  • Air fryer — Handles small roasts and crisping, not large cakes or trays.
  • Dutch oven / casserole pot — Bread and some bakes can be done covered on a very low hob, with less even results.

Equipment guide

How it works: An oven heats food by three routes at once: hot air carries heat to the surface (convection), the walls and elements radiate heat, and the food conducts heat from its surface inwards. A fan oven blows the air around, which strips away the cool layer of air at the food's surface and cooks and browns faster, so recipes usually drop the setting by about 20 °C for fan. The grill (broiler) element gives intense top radiant heat.

MaterialGoodWatch out
Standard enamel interiorEasy to wipe; common.Grease bakes on unless cleaned regularly.
Pyrolytic self-cleaningBurns residue to ash at about 400–500 °C.Long, power-hungry cleaning cycle; strong smells.
Catalytic linersAbsorb splatter during normal cooking.Lose effect over years; not cleanable with harsh products.
Conventional (top and bottom heat)
Best for traditional baking and gentle top browning.
Fan or convection
Even heat on several shelves; faster browning.
Combination steam oven
Adds steam for bread crust and moist reheating.
Countertop or toaster oven
Small, quick to heat; good for small households.
Gas oven
Moist heat; hotter at the top than the bottom in many models.

Buying guidance

Starting out: A fan oven with a separate grill element and a capacity of about 60–70 litres.

Keen cook: Look for accurate thermostat control, a conventional (non-fan) setting for baking and a large, even grill.

Professional: Combi ovens (steam and convection with probes) dominate professional kitchens.

  • Usable capacity: about 60–75 litres for a single oven
  • Maximum temperature: at least 250 °C (higher helps pizza and bread)
  • Separate conventional and fan modes
  • Built-in probe or room for an oven thermometer to check accuracy
  • Triple-glazed door stays cooler
