Method

  1. Step 1

Peel the aubergines (opens in a new tab) in stripes, sprinkle with salt and leave for 15 minutes, then pat dry.

  2. Step 2

Heat the sunflower oil (opens in a new tab) in a frying pan and fry the aubergines (opens in a new tab) whole, turning, until soft and golden all over. Drain on kitchen paper.

Food safety: Dry the aubergines well — water makes hot oil spit.

  3. Step 3

For the filling, soften the onion (opens in a new tab) and garlic (opens in a new tab) in the olive oil (opens in a new tab), add the beef and cook until browned. Add the pepper (opens in a new tab), tomato (opens in a new tab), tomato paste (opens in a new tab), paprika (opens in a new tab), salt and pepper and cook until thick. Stir in the parsley (opens in a new tab).

  4. Step 4

Heat the oven (opens in a new tab) to 180 °C. Arrange the aubergines (opens in a new tab) in a baking dish (opens in a new tab), slit each lengthwise and open into a pocket with a spoon. Fill generously and top with a green pepper (opens in a new tab).

  5. Step 5

Whisk the remaining tomato paste (opens in a new tab) into the hot water, pour around the aubergines (opens in a new tab) and bake until bubbling and the tops are lightly browned.
