Method

  1. Step 1

Melt the sugar (opens in a new tab) with the water in a saucepan (opens in a new tab), without stirring, until it becomes a deep amber caramel. Pour straight into a 22 cm ring (bundt) tin and swirl to coat the base and sides.

Food safety: Molten caramel causes severe burns; handle the tin with oven gloves.

  2. Step 2

Blend the condensed milk (opens in a new tab), milk (opens in a new tab), eggs (opens in a new tab) and vanilla (opens in a new tab) for 1 minute. Let the foam settle, then pour into the tin and cover with foil.

  3. Step 3

Set the tin in a roasting dish, pour in hot water to come halfway up, and bake at 180 °C for about 60 minutes until set with only a slight wobble in the centre.

  4. Step 4

Cool, then chill at least 4 hours. Run a knife round the edges, invert onto a plate with a rim and lift off the tin so the caramel pours over.
