20 biscuits

Method

  1. Step 1

Scatter half the sugar (opens in a new tab) (mixed with cinnamon (opens in a new tab) if using) over the worktop, lay the pastry on it, scatter the rest on top and roll to a 25 × 30 cm rectangle, pressing the sugar in.

  2. Step 2

Fold both long sides in to meet at the centre, then fold one half over the other like closing a book. Wrap and chill 30 minutes until firm.

  3. Step 3

Heat the oven (opens in a new tab) to 200 °C (fan 180 °C). Slice into 1 cm pieces and lay cut-side down, well spaced, on lined trays.

  4. Step 4

Bake 8 minutes until the undersides caramelise, flip with a spatula and bake 5–7 minutes more until golden all over. Cool on a rack — they crisp as they cool.

Food safety: Molten sugar burns; let them cool before tasting.
