Method

  1. Step 1

Beat the butter and sugar (opens in a new tab) until creamy, then beat in the almond flour (opens in a new tab), egg (opens in a new tab), flour and rum (opens in a new tab) to a smooth frangipane.

  2. Step 2

Cut two 24 cm discs from the pastry. Lay one on a lined tray, spread the frangipane in the centre leaving a 3 cm border, and tuck in a ceramic charm (fève) if using. Brush the border with water, lay the second disc on top and press firmly to seal.

Food safety: If you hide a charm, warn everyone before they bite.

  3. Step 3

Brush with the egg (opens in a new tab) glaze (not over the edges, or it won't rise), chill 30 minutes, then glaze again. Score a pattern of curves or a lattice into the top with the back of a knife and poke a small hole in the centre.

  4. Step 4

Bake at 200 °C (fan 180 °C) for 30–35 minutes until puffed and deep golden. Serve warm or at room temperature.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: rum.
  • All-butter puff pastry: Frozen puff pastry (FDC 172790). Shop-bought puff pastry varies; some brands use vegetable fat.
  • Almond flour: Blanched almonds; finely ground almond flour has the same composition.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • A related cake, not the same one: the pithivier, named after the town of Pithiviers, uses the same almond filling but is a domed puff-pastry gâteau with a scalloped rim and a spiral scored on top, eaten all year rather than at Epiphany.

Storage

  • Best on the day; keeps 2 days. Reheat at 160 °C for 10 minutes.

History

The French custom of sharing a cake with a hidden bean on Epiphany, the finder becoming 'king' for the day, goes back to at least the Middle Ages.
