Method

  1. Step 1

Scrub the sweet potatoes (opens in a new tab), prick them a few times and roast whole on a tray until completely soft and caramelised at the edges.

Street vendors roast them in coals; a gas flame or grill also gives a smoky skin.

  2. Step 2

Let them cool just enough to handle, then peel and cut into chunky cubes.

  3. Step 3

While still warm, toss with the lemon juice (opens in a new tab), chaat masala (opens in a new tab), roasted cumin (opens in a new tab), chilli and salt. Top with pomegranate (opens in a new tab) and coriander and eat with toothpicks.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: cayenne / chilli powder, pomegranate, coriander leaves.
  • Chaat masala: Curry powder (FDC 170924) used as a stand-in for the tangy blend of amchur, black salt, cumin and pepper; real chaat masala also carries a lot of salt, so sodium is understated.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Some vendors add slices of tart starfruit (kamrakh) — a lovely contrast if you can find it.

Common mistakes

  • Boiling instead of roasting — the chaat loses its smoky, caramelised sweetness.

Serve with

  • Serve on a leaf plate or in paper cones on a cold evening.

Storage

  • Roasted sweet potato keeps 2 days refrigerated; season just before eating.
