    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
    • Optional ingredients are not included: sour cream.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
    • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

    Good to know

    Tips

    • A food processor grating disc makes quick work of the potatoes.

    Common mistakes

    • Grating the potatoes too early, so they turn grey before the hot milk goes on.

    Food safety

    • Bake until set in the centre (the eggs must be fully cooked).
    • Cool leftovers quickly (shallow containers) and refrigerate within 2 hours; reheat until piping hot (75 °C).

    Storage

    • Refrigerate up to 3 days.

    Reheating

    • Fry slices in a little butter until crisp on both sides.
