Our safety promise
- We never suggest tasting food that may be spoiled or unsafe. When in doubt, throw it out.
- Undercooked meat and poultry go back on the heat until a thermometer reads the safe temperature.
- Fermentation figures come from tested guidance (USDA / National Center for Home Food Preservation, UK FSA and others), cited on each page; where no validated figure exists we say so.
- Acidity, not smell, is the safety test for vegetable ferments: pH 4.6 or below.
