Ingredients

For the rice filling

For the rye crust

For brushing

For the egg butter (munavoi)

Method

  1. Step 1

Simmer the rice in the water until absorbed. Add the milk (opens in a new tab) and cook gently, stirring often, until thick and creamy. Stir in the salt and butter (opens in a new tab) and leave to cool.

Stir regularly so the milk does not catch on the bottom.

  2. Step 2

Mix the rye and wheat flours (opens in a new tab) with the salt and water to a firm, non-sticky dough. Roll into a log, cut into 16 pieces and roll each into a very thin round, about 15 cm across.

  3. Step 3

Heat the oven (opens in a new tab) as hot as it goes, ideally 275 °C. Spread a spoonful of rice filling down the centre of each round, leaving a 2 cm border, then fold the edges over the filling and pinch them into pleats.

    • 275°C
  4. Step 4

Bake on a lined tray until the crust edges are speckled brown.

  5. Step 5

Immediately brush with the milk (opens in a new tab) and melted butter (opens in a new tab) mixture, then cover with a clean cloth so the crusts soften.

    • 2 min
  6. Step 6

For the egg butter (opens in a new tab), hard-boil the eggs (opens in a new tab) (10 minutes in simmering water), cool them in cold water, peel and chop, then mash with the softened butter and a pinch of salt. Serve the pasties warm or cool with egg butter on top.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: egg, butter.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • The rye crust must be rolled very thin — almost translucent — or it will be tough.

Common mistakes

  • A cooler oven dries out the filling before the crust colours.

Serve with

  • Eat with munavoi (egg butter), or with cheese and cucumber for breakfast.

Storage

  • Keep 2 days in an airtight bag, or freeze for up to 2 months.

Reheating

  • Warm in a 200 °C oven for 5–8 minutes.

Variations

  • Perunapiirakka: Fill with mashed potato instead of rice porridge.

How this dish is built

Built from the recipe’s own sections. Each band’s width is its share of the dish by weight. Choose a component to see what it does.

Timeline and readiness cues

  1. Mix and knead · about 40 min

Knead until smooth and soft; it should feel like an earlobe.

  2. Bake · about 15 min at 275 °C

Puffed with golden-brown spots on both sides.

  3. Start to finish: about 55 min. Times are a guide — warmth changes everything; follow the cues.

Hydration = water ÷ flour × 100. Milk is about 87% water and eggs about 75%, so they’re shown separately as “with milk, eggs…”.

  • Wet dough (over 75%) — sticky; use wet hands and folds instead of kneading. Ciabatta, focaccia and open sourdough.
  • Salt 1.5% — normal for bread.
  • 75% wholegrain — absorbs more water and gives a denser, nuttier loaf.

If something goes wrong

  • Pale crust

    Likely causes

    • Oven too cool
    • Too little sugar or no milk/egg for browning
    • Over-fermented (yeast ate the sugars)

    What to do

    • Check the oven with a thermometer
    • Brush with egg wash or milk
    • Shorten the fermentation
  • Burnt bottom

    Likely causes

    • Tray too close to the heat
    • Dark tray absorbs more heat
    • Too much sugar in the dough

    What to do

    • Bake on the middle shelf
    • Double up trays or use a light-coloured one
    • Lower the temperature 10–15 °C and bake a little longer
  • Crust too hard or thick

    Likely causes

    • Baked too long at too low a temperature
    • No steam at the start

    What to do

    • Bake hotter for a shorter time
    • Add steam for the first 15 minutes (tray of boiling water, or a covered Dutch oven)
    • Cool under a tea towel for a softer crust
