Method

  1. Step 1

Toss the spinach (opens in a new tab) with the salt in a large bowl and leave for 10 minutes to wilt. Squeeze out as much liquid as possible by the handful.

    • 12 min
  2. Step 3

Oil a 23 × 33 cm dish. Lay in 5 sheets of filo (opens in a new tab), brushing each with oil and letting them overhang. Spread the filling evenly.

Keep the filo you aren't using covered with a damp tea towel so it doesn't dry out.

  3. Step 4

Fold the overhang in, then cover with the remaining sheets, oiling each one. Tuck the edges in, brush the top and score into portions through the top layers only.

    • 6 min
  4. Step 5

Bake until deep golden and crisp. Rest for 15 minutes before cutting.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

What the dish is built around

Main ingredient

Used in steps 1, 2, 3, 4

Timeline and readiness cues

  1. Mix and knead · about 35 min

Knead until smooth and soft; it should feel like an earlobe.

  2. Bake · about 50 min at 180 °C

Puffed with golden-brown spots on both sides.

  3. Cool · about 15 min

Cool on a rack before slicing — the crumb is still setting; cutting hot bread makes it gummy.

  4. Start to finish: about 1 h 40 min. Times are a guide — warmth changes everything; follow the cues.

If something goes wrong

  • Pale crust

    Likely causes

    • Oven too cool
    • Too little sugar or no milk/egg for browning
    • Over-fermented (yeast ate the sugars)

    What to do

    • Check the oven with a thermometer
    • Brush with egg wash or milk
    • Shorten the fermentation
  • Burnt bottom

    Likely causes

    • Tray too close to the heat
    • Dark tray absorbs more heat
    • Too much sugar in the dough

    What to do

    • Bake on the middle shelf
    • Double up trays or use a light-coloured one
    • Lower the temperature 10–15 °C and bake a little longer
  • Crust too hard or thick

    Likely causes

    • Baked too long at too low a temperature
    • No steam at the start

    What to do

    • Bake hotter for a shorter time
    • Add steam for the first 15 minutes (tray of boiling water, or a covered Dutch oven)
    • Cool under a tea towel for a softer crust
