How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

Good to know

Tips

  • Dressing the lentils while warm helps them soak up the flavour.
  • Salt the lentil water only at the end; early salting can toughen the skins in some lentils.

Common mistakes

  • Crowding the roasting tray, so the vegetables steam instead of browning — use two trays if needed.

Serve with

  • Add a spoon of tahini sauce or yogurt, and warm pita on the side.

Storage

  • Keeps 4 days in the fridge in airtight boxes; add the rocket just before eating.

Reheating

  • Good at room temperature, or warm the lentils and vegetables in the microwave.
