Fresh or dried? The basics

  • Fresh egg pasta (soft wheat and egg, the northern tradition) is tender and absorbent — best with butter, cream and ragù. Dried pasta (durum-wheat semolina and water, the southern tradition) keeps its bite with oil, tomato and seafood. Neither is better; they are different.
  • Use about 1 litre of water per 100 g of pasta and salt it at roughly 10 g per litre.
  • Cook dried pasta a minute short of the packet time, then finish it in the sauce with a splash of its starchy cooking water — that is what makes the sauce cling.
  • Gnocchi are done about 30–60 seconds after they float. Floury potatoes and as little flour as possible make them light.
