Non-vegetarian

ලම්ප්‍රයිස් · lamprais

A Sri Lankan Burgher feast-in-a-parcel: stock-cooked rice, a spiced meat curry, frikkadel meatballs, seeni sambol and a boiled egg wrapped in banana leaf and baked so the flavours mingle. This home version simplifies the traditional mixed-meat curry to chicken.

Lamprais is a Sri Lankan rice dish, ready in about 2 hours 35 minutes and made with short-grain rice, chicken thigh and egg. It serves 6 and is rated advanced to cook.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Not counted (tiny amounts or “to taste”): curry leaves.
  • Sri Lankan roasted curry powder: Curry powder (FDC 170924) used as a stand-in: Sri Lankan roasted curry powder is a darker-roasted blend of coriander, cumin, fennel and warm spices, used in similar teaspoon amounts.
  • Red chilli flakes: Ground cayenne (FDC 170932) used as a stand-in for dried chilli flakes such as pul biber or Aleppo pepper.

Good to know

Tips

  • Pass banana leaves briefly over a flame to make them pliable before folding.

Common mistakes

  • Wrapping the parcels too loosely — the rice dries out in the oven.

Serve with

  • Add a spoon of brinjal (aubergine) pickle or ash plantain curry to each parcel for a fuller lamprais.

Storage

  • Assembled parcels keep refrigerated for 1 day before baking.

Reheating

  • Bake from chilled for 30 minutes until piping hot throughout.
