Method

  1. Step 1

Heat the oven (opens in a new tab) to 170 °C (fan 150 °C) and line a 24 cm springform tin. Melt the chocolate (opens in a new tab) and butter together over barely simmering water and cool slightly.

  2. Step 2

Separate the eggs (opens in a new tab), dropping the whites into a spotlessly clean, grease-free bowl and the yolks into another; even a trace of yolk in the whites stops them whipping, and they are the cake's only lift. Whisk the yolks with 130 g of the sugar (opens in a new tab) until pale and thick. Stir in the chocolate (opens in a new tab) mixture, then the almond flour (opens in a new tab).

  3. Step 3

Whisk the whites with the salt to soft peaks, add the remaining sugar (opens in a new tab) and whisk to glossy, firm peaks. Fold into the chocolate (opens in a new tab) in three additions, gently, until no streaks remain.

  4. Step 4

Pour into the tin and bake 40–45 minutes until the top is crusty and a skewer comes out with moist crumbs. Cool completely in the tin — it sinks a little — then dust with icing sugar (opens in a new tab).

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Almond flour: Blanched almonds; finely ground almond flour has the same composition.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Storage

  • Keeps 4 days covered at room temperature; it gets fudgier.
