Cuisine
British
Roasts, pies, puddings and baking from a temperate island nation, plus fish and chips, tea culture and dishes absorbed from its former empire.
Flavour character: Savoury and comforting: browned roasts and gravy, sharp mustard, horseradish, malt vinegar and Worcestershire sauce, mature cheddar; sweet puddings with custard; baking spiced with nutmeg and mixed spice.

History
Britain's mild, wet climate favoured cattle, sheep, wheat, oats and root vegetables, and roast beef became a national emblem by the 18th century. Sugar, tea and spices from colonial trade made puddings, cakes and afternoon tea central; empire also brought curry, kedgeree and chutneys, and post-war South Asian immigration produced dishes such as chicken tikka masala and balti. Fish and chips had become a working-class staple by the late 19th century, often linked to Jewish fried-fish traditions. Ireland, sharing many dishes, built its diet heavily on the potato until the Great Famine (1845–52).
