How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: heavy cream, chives.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Wash sliced leeks in a bowl of water — grit sinks to the bottom.

Common mistakes

  • Over-blending potatoes in a high-speed blender can make the soup gluey; pulse briefly.

Serve with

  • Serve with crusty bread or cheese on toast.

Storage

  • Refrigerate for 3 days or freeze (before adding cream) for 3 months.

Reheating

  • Reheat gently, stirring, until piping hot.

Variations

  • Vichyssoise (France): Use only leek whites, enrich with more cream and serve chilled.
