Goan
Konkan coconut-and-fish cooking meeting four and a half centuries of Portuguese rule: vinegar-sharp pork curries and cakes in Catholic homes, kokum-soured fish curries in Hindu Saraswat homes.
Flavour character: Sour, hot and garlicky: vinegar or kokum and tamarind against dried red chillies, with coconut milk mellowing fish curries and roasted coconut and poppy seed deepening xacuti.

History
Portugal captured Goa in 1510 under Afonso de Albuquerque and ruled until 1961. Catholic Goans adopted pork, vinegar (traditionally coconut-toddy vinegar), bread and baked sweets; vindaloo is generally traced to the Portuguese carne de vinha d'alhos (meat in wine and garlic), with chillies and spices added in Goa. Bread (pão and poi) was leavened with fermenting toddy. Hindu Goans, especially Saraswat Brahmins, kept a parallel tradition of fish curries soured with kokum and tirphal, and vegetarian dishes such as khatkhatem.
