How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: prawns / shrimp.
  • Cassava flour: Dry pearl tapioca (FDC 169717) used as a stand-in; cassava flour is the whole dried root so it has a little more fibre, but energy and carbohydrate are very close.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • For more authentic banku, mix the cornmeal and cassava flour with water and leave covered at room temperature for 1–2 days to ferment, then skip the lime juice.

Common mistakes

  • Stirring the okra stew too much once the okra goes in — it breaks the okra down and makes it overly stringy.
  • Not paddling the banku hard enough: lumps set and the texture turns grainy.

Serve with

  • Also excellent with grilled tilapia and shito or a pepper sauce.

Storage

  • Refrigerate the stew up to 2 days. Banku keeps a day wrapped in cling film.

Reheating

  • Steam banku wrapped to soften; reheat stew gently.
