Mango (hedgehog and cubes)
Slice the two cheeks off the flat stone, score a grid, and push the skin inside out.
BeginnerMangoRaw green mango
Hedgehog
Stand the mango on its stem end, narrow side facing you.
Slice down about 1 cm to one side of the centre to cut off a cheek, missing the flat stone. Repeat on the other side.
Score each cheek in a criss-cross grid down to the skin, without cutting through it.
Press the skin upward from underneath so the cubes pop out like a hedgehog.
Eat from the skin, or slice the cubes off.
Strips
Cut off the cheeks as above.
Scoop the flesh out with a large spoon held against the skin.
Slice into strips; trim the flesh left around the stone.
Tips
- A ripe mango gives slightly when pressed and smells sweet at the stem.
Safety
- Mango skin and sap can irritate sensitive skin and lips.
