Pomegranate: sketch showing where to cut (segments)

Score and tap

  1. Cut a shallow cone around the crown and lift it off.

  2. Score the skin from top to bottom along the ridges (usually 5–6), only through the skin.

  3. Pull the sections apart.

  4. Hold each section seeds-down over a bowl and tap the back firmly with a wooden spoon so the arils fall out.

Under water

  1. Break the scored sections apart in a bowl of water.

  2. Ease the arils out with your fingers; they sink and the white pith floats.

  3. Skim off the pith and drain.
