Method

  1. Step 1

Wilt the spinach (opens in a new tab), cool, squeeze out all the liquid and chop very finely.

  2. Step 2

Mix the ricotta (opens in a new tab), spinach (opens in a new tab), Parmesan (opens in a new tab), yolks, flour, nutmeg (opens in a new tab) and a little salt. Scatter half the semolina (opens in a new tab) over a tray. Roll the mixture into walnut-sized balls with floured hands, roll in semolina and set on the tray; sprinkle over the rest of the semolina.

  3. Step 3

Refrigerate, uncovered, for at least 1 hour (or up to 24) so the semolina (opens in a new tab) forms a thin skin that holds them together.

This rest replaces the pasta wrapper — don't skip it.

    • Step 4

Melt the butter with the sage (opens in a new tab) until foaming and fragrant. Poach the gnudi in barely simmering salted water, in batches, for 3–4 minutes after they float. Lift into the butter with a slotted spoon (opens in a new tab) and serve with Parmesan (opens in a new tab).

    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
    • Not counted (tiny amounts or “to taste”): salt — so sodium is shown as unknown.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
    • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.
