    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
    • Optional ingredients are not included: parmesan.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

    Good to know

    Tips

    • A parmesan rind simmered in the broth adds lovely depth.

    Common mistakes

    • Not stirring after the pasta goes in — it sticks to the bottom.

    Storage

    • Keeps 3 days in the fridge; it thickens as it sits.

    Reheating

    • Loosen with water or stock and reheat gently.

    Variations

    • With pancetta: Fry diced pancetta with the vegetables for a meatier soup.
