Method

  1. Step 1

Bring the water, salt and coconut oil (opens in a new tab) to a rolling boil. Lower the heat, tip in the rice flour (opens in a new tab) all at once and stir hard with a wooden spoon (opens in a new tab) for 1–2 minutes until it forms a lump with no dry flour. Cover off the heat for 10 minutes.

Food safety: The dough is very hot; let it steam covered before handling.

  2. Step 2

While still warm, knead with the heel of your hand (wet it if needed) for 4–5 minutes until completely smooth and soft, without cracks.

  3. Step 3

Divide into 16 balls (about 30 g). Dust with rice flour (opens in a new tab) and roll each very thin, 14–15 cm across. Traditionally they are trimmed to a perfect circle with a lid.

  4. Step 4

Cook on a medium-hot tawa for about 20 seconds until the top dries, flip, and cook until it puffs (press gently with a cloth). Pathiri should stay white with only faint spots — do not brown.

  5. Step 5

Stack in a covered container; if you like, dip each briefly in warm, salted thin coconut milk (opens in a new tab) before stacking so they turn silky.

Timeline and readiness cues

  1. Mix and knead · about 50 min

Weigh everything. Knead until smooth and elastic: a small piece stretches thin enough to see light through (the windowpane test).

  2. Rest · about 10 min

Covered so it doesn't dry out; relaxed dough rolls and shapes without springing back.

  3. Start to finish: about 1 h. Times are a guide — warmth changes everything; follow the cues.

If something goes wrong

  • Pale crust

    Likely causes

    • Oven too cool
    • Too little sugar or no milk/egg for browning
    • Over-fermented (yeast ate the sugars)

    What to do

    • Check the oven with a thermometer
    • Brush with egg wash or milk
    • Shorten the fermentation
  • Burnt bottom

    Likely causes

    • Tray too close to the heat
    • Dark tray absorbs more heat
    • Too much sugar in the dough

    What to do

    • Bake on the middle shelf
    • Double up trays or use a light-coloured one
    • Lower the temperature 10–15 °C and bake a little longer
  • Tough or chewy flatbread

    Likely causes

    • Dough too stiff
    • Not rested
    • Cooked too slowly on too cool a pan

    What to do

    • Add water until the dough is soft and slightly tacky
    • Rest 20–30 minutes covered so the gluten relaxes
    • Cook on a very hot tawa or pan — quickly
