Method

  1. Step 1

Simmer the drained rice in the water, stirring occasionally, until the grains are completely soft and breaking down, about 40 minutes. Skim off any foam.

  2. Step 2

Add the sugar (opens in a new tab) and stir until dissolved, then simmer gently 15 minutes until thickened.

    • low heat

Stir regularly; the pudding sticks once the sugar is in.

  3. Step 3

Add the saffron (opens in a new tab) water, rose water (opens in a new tab), cardamom (opens in a new tab), butter (opens in a new tab) and most of the almonds (opens in a new tab). Cover with a towel-wrapped lid and cook on the lowest heat for 20 minutes until glossy and thick.

Food safety: Hot sugary pudding can spatter and burn; stir with a long spoon.

  4. Step 4

Pour into a serving dish or bowls, cool, and decorate with lines of cinnamon (opens in a new tab), the remaining almonds (opens in a new tab) and pistachios (opens in a new tab). Chill at least 2 hours.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: pistachios, cinnamon.
  • Basmati rice: Generic long-grain white rice (FDC 168877); basmati has very similar composition.
  • Rose water: Water (FDC 174158); rose water is a distillate with negligible nutrients.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
