Step 4
Pile the remaining rice on top in a pyramid. Poke 5 holes to the base with a spoon handle and drizzle over the melted butter (opens in a new tab).

Food safety: Keep the towel corners tied up on top of the lid, away from the flame.

Good to know
Tips
- Thin potato slices or flatbread can replace the yogurt rice layer for different tahdig styles.
Common mistakes
- Over-boiling the rice in step 2 gives mushy chelow and a soggy crust.
Serve with
- Serve with any khoresh such as ghormeh sabzi or fesenjan, or with joojeh kabab.
Storage
- Refrigerate within 1 hour; keeps 1 day.
Reheating
- Sprinkle with water and steam or microwave until piping hot.
Variations
- Potato tahdig: Line the pot with thin potato slices instead of yogurt rice.
- Lavash tahdig: Line the pot with flatbread for a crisp, cracker-like base.
