What it is
A flat, stiff stainless-steel blade about 15 cm wide with a wooden, plastic or rolled-steel grip along one long edge; some have a ruler printed on the blade. It is used on flat work surfaces. Compare the dough scraper, which is flexible plastic for bowls.
What it’s for: Dividing and shaping dough on the bench and moving chopped food from board to pan.
How to use it
- Press the blade straight down through dough to divide it into portions.
- Use it to tuck and drag a dough ball across the counter to build surface tension.
- Scoop chopped vegetables off the board with the blade.
- Scrape dried flour and dough off the counter at the end.

Equipment guide
How it works: A stiff, straight metal blade with a handle cuts dough cleanly, lifts it off the bench and builds tension when shaping. It also scoops chopped food off the board.
| Material | Good | Watch out |
|---|---|---|
| Stainless steel | Durable, non-reactive, dishwasher-safe, does not hold smells. | Can scratch non-stick pans; conducts heat, so all-metal handles get hot. |
| Food-grade plastic (polypropylene, nylon) | Light, cheap, gentle on non-stick surfaces. | Melts or warps on contact with hot pans; scratches harbour residue; can stain and hold smells. |
