What it is
A palm-sized piece of flexible plastic or silicone, usually with one curved and one straight edge and no handle. The curved side follows the inside of a bowl; the straight side divides dough on the counter. It differs from a bench scraper, which is a rigid metal blade with a handle used on the work surface only.
What it’s for: Getting dough and batter out of bowls and handling wet dough without it sticking to your hands.
How to use it
- Hold it flat in your palm with the curved edge against the bowl.
- Sweep around the inside of the bowl to collect batter or dough.
- Use it to fold and turn wet dough during kneading or stretch-and-fold.
- Use the straight edge to divide soft dough on the counter.

Equipment guide
How it works: A flexible plastic card with a straight edge and a curved edge follows the curve of a bowl to scrape out sticky dough and cuts and folds wet doughs without tearing them.
| Material | Good | Watch out |
|---|---|---|
| Food-grade plastic (polypropylene, nylon) | Light, cheap, gentle on non-stick surfaces. | Melts or warps on contact with hot pans; scratches harbour residue; can stain and hold smells. |
| Silicone | Flexible, so bakes pop out; non-stick; does not rust. | Poor heat conductor, so browning is weak; floppy when full and needs a tray underneath. |

- Curved edge for bowls.
- Combination scraper
- One straight, one curved edge.
