How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: katsuobushi (bonito flakes), nori.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Let the noodles sit untouched for 30 seconds before tossing to get a little char.

Common mistakes

  • Wet noodles stew instead of frying — drain them thoroughly.
  • Adding the sauce too early; it should go in last so it caramelises on the noodles without burning.

Serve with

  • Top with a fried egg, or stuff into a hot-dog roll for yakisoba-pan.

Food safety

  • Cook the pork until no pink remains (71 °C for thin strips is reached in a minute or two over high heat).
  • Refrigerate leftovers within 2 hours and eat within 2 days.

Storage

  • Refrigerate for up to 2 days.

Reheating

  • Reheat in a hot pan with a splash of water.
