Method

  1. Step 1

Salt the aubergine (opens in a new tab) slices lightly and leave 10 minutes, then pat dry. Meanwhile boil the eggs (opens in a new tab) for 10 minutes, cool in cold water and peel.

  2. Step 2

Heat the oil in a frying pan and fry the aubergine (opens in a new tab) in batches until deep golden and soft. Drain on kitchen paper.

Food safety: Dry the aubergine well so the oil doesn't spit.

  3. Step 4

Warm and open the pitas. Spread with tahini sauce (opens in a new tab) and fill with aubergine (opens in a new tab), sliced egg (opens in a new tab), salad and pickles, adding more tahini and hot sauce (opens in a new tab) on top.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: chilli sauce (sriracha-style).
  • Tahini sauce: Plain tahini (FDC 170189). Prepared sauce is diluted with water and lemon, so actual values are lower.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • For a lighter version, brush the aubergine with oil and roast at 220 °C for 25 minutes.

Common mistakes

  • Frying the aubergine in oil that isn't hot enough — it soaks up oil and turns greasy instead of golden.

Serve with

  • Eat immediately, with extra tahini and pickles on the side.

Storage

  • Components keep 2 days in the fridge separately; assemble just before eating.
