Method

  1. Step 1

Simmer the chopped peaches (opens in a new tab) with the sugar (opens in a new tab) and 150 ml water, crushing the fruit with a spoon, until soft and syrupy.

Food safety: Hot sugar syrup can burn badly — let it cool before handling.

  2. Step 2

Meanwhile pour 600 ml water just off the boil (95–100 °C) over the tea in a teapot (opens in a new tab) or heatproof jug and steep for 4 minutes, then strain. Longer steeping makes iced tea bitter and cloudy.

  3. Step 3

Strain the peach (opens in a new tab) syrup into the tea, pressing on the fruit. Stir in the cold water and lemon juice (opens in a new tab).

  4. Step 4

Cool to room temperature, then refrigerate until cold. Serve over plenty of ice, with mint (opens in a new tab) if you like.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: mint.
  • Not counted (tiny amounts or “to taste”): black tea leaves.
  • Ice: Frozen water; same composition as water.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Cooling the tea before refrigerating it — and adding cold water rather than pouring hot tea over ice — helps it stay clear.

Common mistakes

  • Over-steeping the tea to make it 'stronger' — use more leaves instead of more time.

Food safety

  • Homemade fruit syrups and iced tea should be kept refrigerated and used within 3 days.

Storage

  • Keeps 3 days covered in the fridge.

Variations

  • Green tea peach: Use green tea leaves steeped at 80 °C for 2–3 minutes for a lighter, grassier drink.
