How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

  • Optional ingredients are not included: neutral vegetable oil.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Squeeze the kimchi and tofu really dry, or the filling makes the wrappers soggy and split.
  • Freeze uncooked mandu on a tray, then bag them; steam from frozen for 3–4 minutes longer.

Common mistakes

  • Not squeezing the kimchi and tofu — the filling turns watery and the wrappers burst.

Storage

  • Freeze uncooked on a tray, then bag; keep 2 months.

Reheating

  • Steam from frozen for 15 minutes or drop into simmering soup.
