What it is

A flat brush with natural bristles or silicone fibres on a short handle. Natural bristles hold liquid well and spread it thinly for delicate pastry; silicone is easier to clean and heat-resistant but holds less. Larger basting brushes are used at the grill.

What it’s for: Spreading a thin, even layer of liquid on food or tins.

How to use it

  1. Dip the brush lightly into the egg wash, butter or glaze.
  2. Wipe off excess on the edge of the bowl.
  3. Brush gently in one direction without dragging the pastry.
  4. Avoid letting egg wash pool or drip down cut edges of puff pastry.

Materials
natural bristle, silicone, nylon
Care and cleaning
Wash in hot soapy water straight away, especially after egg or butter; dry bristles fully. Keep separate brushes for raw meat.
Limitations

Safety

  • Use a clean brush for glazing cooked food, not the one used on raw meat.

If you don’t have one

  • Fingers or kitchen paper — Dab egg wash or grease a tin with folded kitchen paper.

Equipment guide

How it works: Bristles hold a thin film of liquid and release it evenly over a surface without pressing hard, for egg wash, glaze, butter or water.
