    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
    • Optional ingredients are not included: spinach.
    • Jaggery / palm sugar: Brown sugar (FDC 168833) used as a stand-in for unrefined cane jaggery and palm sugar.
    • Kecap manis (sweet soy sauce): Hoisin sauce (FDC 172886) used as a stand-in for this thick palm-sugar-sweetened soy sauce; sugar and sodium differ by brand.
    • Tamarind paste: Raw tamarind pulp (FDC 167763). Commercial concentrates vary in water content.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

    Good to know

    Tips

    • Street vendors grind the sauce to order on a stone mortar (cobek) for each customer.

    Common mistakes

    • Overcooking the vegetables — they should keep some crunch, then be cooled so they don't wilt under the sauce.
    • Making the peanut sauce too thick: it should pour like heavy cream; loosen with warm water as it stands.

    Serve with

    • Top with prawn crackers and fried shallots; serve with lontong (compressed rice cakes).

    Storage

    • Keep sauce and vegetables separately for up to 3 days.

    Reheating

    • Warm the sauce gently with a splash of water.

    Variations

    • Pecel (Indonesia): A Javanese cousin with a spicier, kencur-scented peanut sauce over blanched greens.
