Method

  1. Step 1

Grind the peanuts in a food processor (opens in a new tab) until fine but still slightly gritty; tip out.

  2. Step 2

Blend the shallots (opens in a new tab), garlic (opens in a new tab) and soaked chillies to a paste. Fry it in the oil in a saucepan (opens in a new tab) until fragrant and no longer raw-smelling.

  3. Step 3

Add the ground peanuts, water, palm sugar (opens in a new tab), tamarind, kecap manis (opens in a new tab), salt and lime leaves. Simmer, stirring often, until thick and the oil begins to separate at the edges.

    • 10 min
    • low heat

It catches easily — scrape the bottom as you stir.

  4. Step 4

Remove the lime leaves and adjust with water to the thickness you want: thicker for satay, looser for gado-gado.

Good to know

Tips

  • Roast raw peanuts yourself in a dry pan until golden for the most fragrant sauce.

Common mistakes

  • Grinding peanuts too long so they turn to butter — a little texture is characteristic.

Serve with

  • Over chicken or beef satay with sliced shallots and a little sambal kecap.
  • Dressing for gado-gado, pecel or lontong.

Storage

  • Refrigerate for up to 5 days or freeze for 3 months.

Reheating

  • Reheat gently with water, stirring, as it thickens a lot when cold.
