How these numbers were made
- Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
- *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
- Optional ingredients are not included: cheddar, dill pickles, tomato ketchup, prepared mustard.
- “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know
Tips
- Handle the meat as little as possible; overworking makes dense, springy burgers.
- Salt only the outside, right before cooking — salting the mince early makes it sausage-like.
Common mistakes
- Pressing patties with a spatula squeezes out the juices.
- Crowding the pan steams the meat instead of browning it.
Serve with
- Serve with oven fries, coleslaw or a green salad.
Storage
- Shaped raw patties keep 1 day in the fridge or 3 months frozen between sheets of baking paper.
Variations
- Smash burger: Press balls of beef very thin onto a smoking-hot griddle for lacy, crisp edges.
