Sushi vinegar

Method

  1. Step 1

Rinse the rice until the water runs nearly clear, drain for 15 minutes, then cook with the water (in a rice cooker, or covered on low for 15 minutes and rest 10).

  2. Step 2

Dissolve the sugar (opens in a new tab) and salt in the vinegar. Spread the hot rice in a wide bowl and fold in the vinegar with a cutting motion while fanning to cool it to body temperature.

    • 8 min

Food safety: Don't keep sushi rice at room temperature for more than a few hours.

  3. Step 3

Cook the egg (opens in a new tab) in a thin layer in a lightly oiled pan, flipping once, then roll up and slice into fine ribbons.

  4. Step 4

Divide the rice between bowls, scatter with nori (opens in a new tab) and egg (opens in a new tab) ribbons, then arrange the fish, prawns (opens in a new tab) and cucumber (opens in a new tab) on top. Sprinkle with sesame (opens in a new tab) and serve with soy sauce (opens in a new tab).

    • 8 min

Food safety: Use only fish sold as sashimi-grade (previously frozen to kill parasites) and keep it chilled until serving.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: sesame seeds, soy sauce.
  • Rice vinegar: Distilled vinegar (FDC 172237) used as a stand-in for unseasoned rice vinegar.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Keep the fish in the fridge until the last minute and assemble just before eating.

Common mistakes

  • Adding vinegar to cold rice — it must be hot so it absorbs the seasoning.
  • Using fish not sold as sashimi-grade.

Storage

  • Eat the day it is made; don't refrigerate raw-fish sushi rice for more than a few hours. Rice without fish can be kept covered at cool room temperature for a few hours.

Variations

  • Gomoku chirashi: A home style with simmered shiitake, carrot and lotus root mixed into the rice instead of raw fish.
