How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Not counted (tiny amounts or “to taste”): sichuan peppercorns.
  • Chinese black vinegar: Balsamic vinegar (FDC 172241) used as a stand-in for Chinkiang/Zhenjiang black rice vinegar; both are dark, aged and slightly sweet.
  • Chilli oil: Neutral vegetable oil (FDC 172336) used as a stand-in; the chilli solids add little energy.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Gentle residual-heat poaching keeps the breast silky rather than stringy.

Common mistakes

  • Boiling the chicken hard — it tightens and dries; keep it at a bare simmer.

Serve with

  • As part of a spread of Sichuan cold dishes, or with rice for lunch.

Food safety

  • Cook chicken until the thickest part reaches 74 °C and the juices run clear. Keep raw chicken and its board away from the salad ingredients.
  • Cool the poached chicken quickly and refrigerate within 2 hours.

Storage

  • Chicken and sauce keep 2 days separately in the fridge.
