How these numbers were made
- Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
- *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
- Optional ingredients are not included: green chilli.
- Not counted (tiny amounts or “to taste”): curry leaves, asafoetida.
- “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know
Tips
- Let the potato filling cool before shaping, so the balls hold together in the batter.
Common mistakes
- A thin batter slides off the vada; it should coat the back of a spoon thickly.
Serve with
- Serve with green coriander chutney, tamarind chutney and cutting chai.
Storage
- Best eaten immediately. Garlic chutney keeps 2 weeks in a jar.
Variations
- Batata vada: Serve the fritters alone with chutney, without the bread.
