Method

  1. Step 1

Make small cuts all over the beef with a thin knife and push in the bacon (opens in a new tab) sticks and slivered garlic (opens in a new tab). Cover with the vinegar and water and refrigerate for at least 12 hours, turning once.

    • 15 min

Food safety: Marinate raw beef in the fridge and discard the marinade.

  2. Step 2

Drain and pat the meat dry, season with salt and pepper (opens in a new tab), and brown it on all sides in the oil in a heavy pot. Lift out.

  3. Step 3

In the same pot cook the onion (opens in a new tab), carrot (opens in a new tab), celery (opens in a new tab), parsnip (opens in a new tab) and chopped garlic (opens in a new tab) until well browned and sticky, about 20 minutes — this colour makes the sauce.

  5. Step 5

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: parsnip, dried figs.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Pašticada tastes even better the next day once the sauce settles into the meat.

Common mistakes

  • Under-browning the vegetables — the dark colour of the sauce comes from patient browning, not from the wine.
  • Boiling instead of braising gently makes the lean beef dry and stringy.

Serve with

  • Serve with potato gnocchi (njoki) or homemade pasta to catch the sauce.

Storage

  • Refrigerate up to 4 days or freeze up to 3 months in its sauce.

Reheating

  • Warm slowly in the sauce, covered.
