  4. Step 4

Meanwhile roll the dough to about 4 mm thick and cut into 5 mm strips. Gently stretch each strip to roughly double its length.

Experienced cooks pull the noodles by hand; cutting and stretching gives a similar chewy result.

  5. Step 5

Boil the noodles in salted water until chewy-tender, drain and rinse briefly in hot water.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: coriander leaves, dill, wine vinegar.
  • Red chilli flakes: Ground cayenne (FDC 170932) used as a stand-in for dried chilli flakes such as pul biber or Aleppo pepper.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Serve with

  • With black or green tea and a simple tomato-onion salad.

Food safety

  • Simmer the lamb until tender (well above 71 °C).
  • Cool leftover stew quickly and refrigerate within 2 hours; reheat until boiling.

Storage
