Method

  1. Step 1

Mix the pork, beef, rice, onion (opens in a new tab), tomatoes (opens in a new tab), tomato paste (opens in a new tab), herbs, cinnamon (opens in a new tab), half the oil, salt and pepper (opens in a new tab).

    • 10 min

Food safety: Wash hands after handling raw meat.

  2. Step 2

Lay a leaf shiny side down, put a heaped teaspoon of filling near the stem, fold in the sides and roll up firmly but not too tight — the rice swells.

    • 30 min
  3. Step 3

Line a heavy pot with a few torn leaves and pack the rolls in tightly, seam side down, in layers. Pour over the remaining oil, the lemon juice (opens in a new tab) and water and weigh down with an upturned plate.

  4. Step 4

Bring to a simmer, cover and cook gently until the rice and meat are cooked and most of the liquid has been absorbed. Rest for 10 minutes.

    • 60 min
    • low heat

Food safety: Check one roll: the filling should be cooked through (71 °C), with no pink meat.

  5. Step 5

Lift the koupepia onto a platter, spoon over a little of the pan juices and serve warm with a bowl of yogurt (opens in a new tab).
