Method

  1. Step 1

Melt the butter (opens in a new tab) in a pot and soften the leek (opens in a new tab) (and carrot (opens in a new tab), if using) without colouring.

  2. Step 2

Add the potatoes (opens in a new tab), stock, allspice (opens in a new tab), bay and salt. Simmer until the potatoes are just tender.

    • 15 min
    • medium heat
  3. Step 3

Pour in the cream and bring back to a gentle simmer. Add the salmon (opens in a new tab), then turn the heat to low and poach without stirring until just opaque.

    • 6 min
    • low heat

Food safety: Fish is cooked when it flakes easily and is opaque throughout (63 °C).

  4. Step 4

Stir in the dill (opens in a new tab) and pepper (opens in a new tab) gently, so the salmon (opens in a new tab) stays in chunks, and serve.
