How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • Optional ingredients are not included: green chilli.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Press cling film onto the surface to slow browning; the vinegar helps too.

Common mistakes

  • Making it as thick as guacamole; guasacaca should flow off a spoon.

Serve with

  • Arepas, empanadas and tequeños.
  • Parrilla: grilled steak, chorizo and chicken.
  • Patacones and yuca frita.

Storage

  • Refrigerate, surface covered, for up to 2 days.

Variations

  • Chunky guasacaca (Venezuela): All the vegetables finely hand-chopped and the avocado mashed, for a salsa-like texture.
