Good to know
Tips
- Make it a few hours (or a day) ahead — the dried oregano needs time to soften and the flavours to marry.
Common mistakes
- Using a food processor until smooth — chimichurri should be chopped, with the herbs suspended in the oil.
Serve with
- Asado: grilled beef, chorizo and provoleta
- Choripán
- Grilled vegetables or fish
Food safety
- Raw garlic or herbs kept under oil can support botulism if left at room temperature. Refrigerate and use within the stated time; never store at room temperature.
Storage
- Keeps in a covered jar in the fridge for up to 1 week.
Variations
- Chimichurri rojo (Argentina): More paprika and sometimes finely diced red pepper.
