Meanwhile, toss the onion with sumac (opens in a new tab), parsley (opens in a new tab) and a pinch of salt for the salad.

How these numbers were made
- Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
- *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
- Optional ingredients are not included: flour tortilla, red onion, sumac, parsley, tomato, green chilli.
- Red chilli flakes: Ground cayenne (FDC 170932) used as a stand-in for dried chilli flakes such as pul biber or Aleppo pepper.
- “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know
Tips
- Wide, flat skewers are essential — round skewers let the meat spin and slip off.
- Keep the meat and your hands cold; warm fat makes the mixture fall apart.
Common mistakes
- Using lean mince — without fat the kebab is dry and will not hold on the skewer.
Serve with
- With ayran and a shepherd's salad.
Storage
- Leftovers keep 2 days in the fridge.
Reheating
- Reheat in a hot pan or oven until piping hot.
Variations
- Urfa kebab: The mild version from neighbouring Şanlıurfa, made without the hot pepper.
