  3. Step 3

Wipe the banana leaves (opens in a new tab) and pass them briefly over a flame to make them pliable. Grease a leaf, press a golf-ball of dough into a very thin 20 cm round, add 2–3 tbsp guiso and top with olives, raisins (opens in a new tab), capers (opens in a new tab) and pepper (opens in a new tab) strips.

    • 50 min
  4. Step 4

Fold the dough and leaf over the filling into a rectangle, wrap in a second leaf and tie like a parcel with string.

    • 20 min
  5. Step 5

Boil the hallacas in a large pot of salted water for 1 hour. Drain and serve hot in their leaves, unwrapped at the table.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Not counted (tiny amounts or “to taste”): annatto (achiote) seeds / ground, banana leaves.
  • Masarepa (precooked corn meal): Degermed white cornmeal used as a stand-in for precooked white corn meal (harina precocida).
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.
