  2. Step 2

Add 1 tbsp oil to the pan and cook the gongura leaves (opens in a new tab), stirring, until they wilt completely, darken and turn mushy and the moisture has cooked off.

    • 7 min
    • medium heat
  3. Step 3

Grind the roasted spices with the salt to a powder, then add half the garlic (opens in a new tab) and the cooled gongura (opens in a new tab) and pulse to a coarse paste (or pound in a mortar for the traditional texture).

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • Not counted (tiny amounts or “to taste”): curry leaves, asafoetida.
  • Gongura (sorrel / roselle leaves): Raw dock / sorrel (FDC 170076) used as a stand-in for the sour leaves of Hibiscus cannabinus / sabdariffa; both are tart, oxalic leafy greens.
  • Chana dal (split bengal gram): Whole raw chickpeas / bengal gram (FDC 173756) used as a stand-in for split, skinned desi chickpeas; the composition is very close.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Gongura's sourness varies; red-stemmed leaves are tarter than green ones. Taste and add more chilli or salt to balance.

Common mistakes

  • Leaving water in the leaves — wet gongura makes a watery pachadi that spoils quickly.

Serve with

  • Mix into hot rice with a spoonful of ghee and raw onion slices on the side — the classic Andhra way.

Food safety

  • Contains garlic and cooked leaves under oil; always refrigerate.
  • Store in a scrupulously clean, completely dry jar (sterilise it in boiling water or a low oven and let it dry fully), and always use a dry spoon; moisture is what spoils chutneys and pickles.

Storage

  • Refrigerate in a clean jar for up to 1 week; a layer of oil on top helps it keep.
