Ingredients

Method

  1. Step 1

Cut off the top and base of the pineapple (opens in a new tab), slice away the skin and dig out the brown 'eyes'. Quarter lengthways, cut out the woody core and chop the flesh.

  2. Step 2

Pour the cold water into the blender (opens in a new tab) first, then add the pineapple (opens in a new tab) and mint (opens in a new tab). Blend on high for about 45 seconds until completely smooth.

Liquid first helps the blades catch the fruit and stops it jamming.

  3. Step 3

Strain through a sieve, pressing on the pulp. Taste and add lime if it needs sharpening, then serve over ice. The foam on top is natural.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: mint, lime juice, ice.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • A ripe pineapple smells sweet at the base and a centre leaf pulls out easily.

Common mistakes

  • Including the core, which makes the juice fibrous and less sweet.

Serve with

  • Use as the base for a virgin piña colada or mix half and half with orange juice.

Food safety

  • Fresh, unpasteurised juice has not been heat-treated. Wash produce well under running water, use clean equipment, drink it the same day and keep it chilled; pregnant people, young children, older adults and anyone with a weakened immune system may prefer pasteurised juice.
  • Juicing removes most of the fibre, so a glass of fruit juice delivers the natural sugars of several pieces of fruit quickly; whole fruit is more filling.
  • Fresh pineapple contains bromelain, which can make the mouth tingle; this is normal.

Storage

  • Best the same day; keeps 1 day in the fridge (stir before serving).
