Peel and dice the guava (opens in a new tab) and papaya (opens in a new tab), segment the orange (opens in a new tab) and halve the grapes (opens in a new tab), cutting everything into bite-sized pieces of similar size. Put them in a large bowl with the pomegranate (opens in a new tab).

  2. Step 2

Cut the apple (opens in a new tab) and slice the banana (opens in a new tab) last, so they don't brown, and add them to the bowl.

  3. Step 3

Sprinkle over the chaat masala (opens in a new tab), black pepper (opens in a new tab), roasted cumin (opens in a new tab) and salt, squeeze over the lemon juice (opens in a new tab) and toss gently. Scatter with mint (opens in a new tab) and serve immediately.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: grapes, cumin, mint.
  • Chaat masala: Curry powder (FDC 170924) used as a stand-in for the tangy blend of amchur, black salt, cumin and pepper; real chaat masala also carries a lot of salt, so sodium is understated.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Use whatever is in season — chikoo, pear, melon, pineapple and starfruit are all common.

Common mistakes

  • Making it too far ahead — the salt draws juice from the fruit and the banana goes mushy.

Serve with

  • Serve in paper bowls with toothpicks, street-style.

Storage

  • Best eaten within 30 minutes.

Variations

  • Creamy fruit chaat: Fold in a few spoons of sweetened yogurt or cream.
