Food safety: Blend hot liquids in small batches with the lid vented and covered with a towel.

  3. Step 3

Push the purée through a sieve back into the pan to remove seeds and skins. Add the salt, sugar (opens in a new tab) and Kashmiri chilli and simmer for 5 minutes; thin with a little hot water if it seems thick.

    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
    • Optional ingredients are not included: coriander leaves, heavy cream.
    • Kashmiri chilli powder: Paprika (FDC 171329) used as a stand-in: Kashmiri chilli is a mild, deep-red chilli powder used mainly for colour.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

    Good to know

    Tips

    • Very ripe, deep-red tomatoes give the best colour; in winter a 400 g can of plum tomatoes can replace half the fresh ones.

    Common mistakes

    • Skipping the sieve leaves a gritty, seedy texture — shorba should be silky and thin.

    Serve with

    • Serve in cups as a starter before a North Indian meal, or with toasted bread for a light supper.

    Storage

    • Keeps 3 days refrigerated or 3 months frozen (without cream).

    Reheating

    • Reheat gently, adding a splash of water if it has thickened.
